Are they Pistachios??? They must be! They're only available for a week in their raw form before they roast them???

Yum, I bet they taste so good fresh...no? I saw fresh (in the shell) pecans last Sat at the market but I didnt buy any. Perhaps this coming week. I have never really thought about nuts being seasonal.

The green pistachios taste less nutty than their elder counterparts, because they're not toasted, and have a sort of milky texture. They also taste a little bit piney, probably because of the flesh surrounding them. They are way more delicate than regular pistachios, sort of like green almonds.
